Central Asia's Vegan Dishes

Qurutob, a traditional Tajik vegetarian dish. Image from Caravanistan, used with permission.

Central Asia has been described ‘the nightmare of a vegetarian‘. Yet, every country in the region has some ‘finger-licking’ vegan dishes to offer to meat avoiders, suggests Caravanistan.

Small error here: vegetarian dishes, not vegan dishes. For vegans, living in Central Asia still does come quite close to a hunger strike :-) BTW, Alex, have you had Qurtob? Is it good? I have just read about, I haven’t had it myself yet.

I dont know what the dish ingredients are but from the photo it looks quite similar to our Lebanese Tabboule :)
